Pie and mash can be traced back to the 18th Century when for many Londoners, eel pie and mash was a staple part of their diet. Cheap, wholesome and filling.
Pies were made and eaten fresh each day. Street vendors would rise early each morning to make their pies which were then sold on the streets of London.
Originally, the pies were filled with cooked or stewed eels, caught from the Thames. These provided a cheap and nutritious meal for working Londoners. Later, the pies would be filled with cooked minced beef.
The liquor is a type of parsley gravy which is served with the pie and mash. If eaten traditionally, a liberal amount of salt and vinegar should cover the pie mash and liquor.
Today stewed eel pie mash and liquor continues to be a favourite meal for many. Simple, cheap and fun.
Pie shops now offer a wide variety of different pie fillings including minced beef, steak and kidney and vegetarian options. Some also bake sweet dessert pies which are served with custard or ice cream.
